Spicy Crab Cakes: Foodie Friday

Spicy Crab Cake 
This a really versatile recipe that I have been preparing for my family for years. Many times I make this dish straight out of the pantry. You don't have to include the fresh red pepper and scallions. You can use onion powder. If you don't have crabmeat, substitute a can of tuna fish or left over fish of any type. I love to make this dish after I discover the cracker box half open and all the crackers stale inside. Seriously, have fun with this recipe spice it up more, or cool it down with some lemon or lime....


Spicy Crab Cakes

prep time: 20 minutes                                serves: 4-6

Ingredients: 

Premium crabmeat chopped 16 ounces

1 cup of crushed crackers (Schar gluten-free crackers)

1/2 cup red pepper minced

1/8 cup parsley chopped

1/8 cup scallions chopped

1/2 tablespoon of sweet relish

1/8 tablespoon cayenne pepper (more or less depending on how spicy you want the cakes)

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1/2 cup of mayonnaise 

1/2 teaspoon of salt

1/2 teaspoon of pepper

1 egg 

Extra Virgin Olive oil for frying


Directions: 

1) If you have a food processor you can crush up the crackers to a bread crumb consistency.

2) Beat the egg in a large mixing bowl. 

3) Mix all of the ingredients with the egg and make hand size patties.

4) Fry the patties in a large nonstick skillet on medium high heat. Approximately 2 minutes per side or until they are golden brown.

5) Serve with a side of rice or corn on the cob. It is also nice to cover the cakes with Remoulade sauce (I like Boar's Head) or tartar sauce.
