Although I've posted two pie recipes, I'm far from a pie baker! Far. Like, faa-ar.
For this genius recipe, I have my sister-in-law to thank.
The crust is the easiest magic trick on the planet.
Add fresh peaches and some cream and voila! Perfection!
Are you ready for the secret of the crust? Ready? Ready?
Saltines.
+ only 4 other ingredients!
This is so my kind of recipe!
And I'm pretty sure it'd be super easy to swap out peaches for some other great filling!
As a bonus, it's perfect for extra little mini helpers... see?
Hand a sleeve of saltines to said toddler and let them destroy to their hearts content...
Oh! What's that? I forgot to check the recipe? Turns out I didn't need a whole sleeve. Whoops.
I have a lot of saltine powder should I need a triple batch of pie crust:)
Turns out, you only need 14. So we grabbed another sleeve, pulled out 14, crushed them with a spoon instead...

Peach Pie w/ Saltine Crust
3 egg whites (beaten until peaked)
1 c. sugar
1/2 tsp. baking powder
1/2 tsp. vanilla
1/3 c. pecans smashed fine (optional)
14 soda crackers
Beat egg whites until stiff. Gradually add sugar, crackers, baking powder, vanilla, and pecans.
Pour into pie pan (sprayed with non-stick spray). Bake 30 minutes at 325 degrees. When cool, push down with your hand. Add 5 sliced peaches and whipped cream.
Best enjoyed immediately!
I will tell you it's not the prettiest pie on the planet, but it so makes up for that in taste! I've made this a number of times and the results are a resounding, "Hello, amazing! What is this crust made of!?" :) Mua-hahaha. I love secrets. Not that this is so secret anymore. Nor was it ever mine to keep... alas, you get the point. Now go! Bake!! Your family and friends will be so impressed:)
