cilantro or coriander leaves is a very good anti oxidant.The benefits of anti oxidants include powerful protection against all types of degenerative diseases such as cancer, heart disease, diabetes, arthritis, macular degeneration, Alzheimer's disease, and many more.Now we prepare a delicious and healthyl or kothimeera karam or kothamalli thuvaiyal with this antioxident herb.
Ingredients
kothamalli(coriander leaves) - 1 bunch. [medium size]
red chillies -3 or 4.
seesame oil - 3 tsp.
tamarind - small goosebery size.
urad dal - 1 tsp.
mustard seeds - 1/2 tsp.
salt - as required.
hing - 1/4 tsp.
Preparation
Wash kothamalli(kothimeera) thoroughly with water, seperate the leaves from the stems,you can retain tender stems.
[This is what, the quantity i have used for one bunch].
Soak the tamarind in water and prepare thick tamarind extract.
Method.
Take a kadai, add 1 tsp of oil, saute red chillies for few seconds,till it becomes hot and keep it aside.
In the same kadai,saute the coriander leaves for 2 minutes, till the water absorbs, and it shrink.
In a mixie or blender grind red chillies and tamarind extract for few seconds,then add sauted coriander leaves(kothamalli leaves) and salt , grind it with little water.
In a kadai add some 3 tsp of oil, add Mustard seeds,when it splutters add hing, add urad dal,when it turns golden brown add this ground Mixture, saute for few Minutes very frequently till it leaves the sides of kadai.
It goes very well with idli,dosa, and rice.you can also refrigerate and store it for a week
