It was just 8 pm and both the kids wanted orange cake..Really!! that was not my idea of spending a quiet Sunday evening...... ya...my kids are like that....they will coax me, butter me, hug me, sweet talk...into baking cake.....at night.
Well, they promised that they will help me all through and also wash the dishes and help me clean the counter and kitchen....and that is really sweet of them and I could not resist then.
Oh please forgive me for the pics....I am not good with nighttime shots and that too with my humble P&S...still manged to get some shots for you guys...this cake is awesome with all the citrusy flavor...so soft and yum...it broke my new diet resolution ...sigh :(...you need to try it...and oranges are in season now...so no excuse.
Recipe Adapted from Donna Hay Magazine.
Ingredients:
Flour: 1 1/2 cups + 2 1/2 tbsp.
Baking powder: 1 1/4 tsp.
Sugar: 3/4 cup +1 tbsp.
Butter: 1/2 cup + 1 tbsp.(I used salted)
Eggs: 2.
Orange juice: Juice of 3 or 4 medium sized orange.
Finely grated zest of 1 orange.
Orange glaze.
Icing sugar: 1 cup, sifted.
Orange juice: Juice of 1 orange.
Orange zest to decorate (optional).
Method
Preheat oven to 180 degree C. Butter an 8 inch pan, I used a 10 inch round pan, coz I love thin cake...totally in love with sheet cakes..
Cream butter and sugar for 3 minutes. Then add eggs one by one and cream again. Grate zest of the orange to it.
Sieve the flour and baking powder into this.
And beat again....add the orange juice while creaming.
Cream until you get a smooth and spongy batter.
Pour into greased baking pan....and bake. (I used a large pan, coz I wanted thin cake)...
Meanwhile powder the sugar with a tsp of cornflour (homemade icing sugar) and sieve and keep aside. Pour half orange juice into a bowl and slowly add the icing sugar.
Grab a Macho Guy and allow him to show his muscle power....whisk the icing sugar into the orange juice... alternately adding the icing sugar and the juice .until you get a smooth dropping consistency.
See, the icing has an orange tint and believe me the flavor was just OMG!
Allow the Macho Guy to drizzle it over the baked and cooled cake.....and step aside for him to play Chef.
Hey, the whole kitchen was so aromatic that I had neighbors knocking on my door by 9.30 pm..
Note: Do not just dunk the whole icing sugar into the orange juice...just add slowly, sometimes you might need a little more maybe half cup, and the icing will set if kept, so pour it over the cake as soon as you get a dropping consistency.
