I found this recipe recently and was so excited because I LOVE cheesecake, but don't always have the time to make one. You can make this Cheesecake Cheese Ball in only a few short minutes, and with only a few ingredients! I haven't ventured beyond graham crackers and strawberries for my dippers, but you could probably dip just about anything and it would taste fabulous too!
Cheesecake Cheese Ball
1/2 cup butter
8 oz. cream cheese
3/4 cup powdered sugar
1 tsp. vanilla
1+ cups mini chocolate chips (divided in half)
Mix everything together, but save half of your chocolate chips for later. I put about 1/2 cup in my mixture, but you can definitely add more! Refrigerate this mixture for about 4 hours (I made this in the evening, so I actually ended up leaving it in the fridge overnight).
Roll the mixture into a ball. This is surprisingly easy-it only took about a minute to shape it with my hands. Roll the ball into the other half of the chocolate chips. Again, you can use as many as you'd like, but I used about 1/2 cup. I just poured them on a plate and then rolled the ball around until it was well coated.
The original recipe said to refrigerate overnight before serving, but I served mine right away and it was wonderful! I like recipes that you can make in advance though, because it saves a lot of time and stress when you don't have to make everything at the last minute when hosting or attending a dinner or party.
