It is traditional on Good Friday for Italians to eat a simple meatless dish. Some people make fish, others a vegetarian pasta dish made with walnuts, breadcrumbs and olive oil... and some folks make this olive oil based pasta dish which is flavored with anchovy and red pepper flakes. 

Usually Good Friday Pasta doesn't have greens in it,  but I can't eat a meal that doesn't include vegetables, so I added Broccoli Rabe which is a bitter green symbolizing the bitterness of the day. The saltiness of the anchovy represents the tears shed by Jesus' followers.

The taste of this pasta is not fishy. Anchovy when turned into a pasta and mixed into a sauce because a flavor enhancer. If you are interested this post explains the phenomenon in more detail: The Height of Flavor: Glutamate Cooking. The dish is a very homey comforting meal that requires little work, which is nice, especially if you are like me and will be hosting Easter dinner.

Anchovy Broccoli Rabe Pasta a.k.a Good Friday Pasta

preparation time: 15 minutes                                 Serves: 4 - 6

Ingredients:

1/2 cups of Extra-Virgin olive oil
4 cloves garlic minced
1 dash red pepper flakes
1 tablespoon crushed anchovy or anchovy paste
1 bunch of greens chopped either: broccoli rabe, spinach, or escarole
1 pound pasta. (I used fusilli)
garnish: parmesan cheese

Directions:

1) Bring put at least 2 tablespoons of salt in a large sauce pan of water to boil for the pasta.

2) While the water is coming to a boil in a large skillet put the oil and garlic. Heat the oil and garlic together. This helps to infuse the oil with the garlic flavor. Do not brown the garlic. It will become bitter.

3) When the oil begins to get hot add the anchovy and red pepper flakes. Whisk the anchovy into the oil until it dissolves.

4) Add the greens. Salt them and cook until they wilt. 

5) When the pasta is cooked add it to the skillet. Mix well. Let sit for at least 5 minutes. Check salt. Add pepper and garnish with parmesan cheese.
