Green Eggs and Ham
Because we're celebrating Dr Seuss this month with Read Across America!
It's easy to die your eggs green and my kids got a kick out of it. Sure, this isn't the best photo composition (and yes I love my bacon burnt), but my kids were hungry!
To die your eggs green, first separate the yolks from the whites. Do it carefully so that your yolk remains in tact. I put each component into a separate bowl. So for those 2 eggs I used 4 bowls.
Next, add a couple drops of green food coloring to the egg whites and whisk it in until the coloring is well incorporated. Carefully slide the egg yolk back onto the egg white.
Cook your eggs sunny side up. What? You don't cook eggs sunny side up because it is intimidating? Well, it is totally easy!
Melt a tablespoons or two in a skillet over medium heat. Slide the egg onto the skillet. Cover with a lid or aluminum foil. Reduce heat to medium-low. Walk away and come back a couple minutes later to check on it. It is done when the whites are completely set on top around the yolk. If you want the yolk to set as well (for kids, ya know), just reduce the heat all the way to low and cook a couple minutes longer.
