Do you still have hard boiled eggs left over from Easter? I was getting tired of egg salad, but being a good New England girl I couldn't waste the eggs, so I started thinking about what goes with eggs, why bacon, of course! Besides eggs what food do I think of in the Spring: asparagus... voila! 

My family really loved this dish... putting a little bacon in anything seems to make it an easy sell, but even my husband who is not too big on hard boiled eggs loved it.

Bacon & Egg Asparagus Spaghetti

preparation time: 20 minutes                                Serves: 4 - 6

Ingredients:

6 to 8 ounces of chopped bacon
1 chopped bunch of asparagus
4 to 6 crumbled hard boiled eggs
1/4 cup of grated parmesan cheese
12 ounces of spaghetti
salt and pepper to taste


Directions:

1) Bring a large sauce pan of well salted water to a boil for the pasta. 

2) While the pasta is cooking. Sauté the bacon in the oil until it starts to get brown then add the asparagus and cook it until the bacon is browned and the asparagus is still firm but cooked. 

3) Add pasta to the skillet and mix. When the pasta is coated with the oil add the eggs, cheese, salt and pepper.
