Antipasto Platter


My father would have loved this appetizer. You see my dad was a meat-a-tarian. He only had 5 total fruits and vegetables that he liked.

Fortunately my mom refused to have her kids eat such a limited diet and feed us everything. I am so glad I'm not a picky eater... but picking is what this meat eater's delight is about... a little piece of salami, a prosciutto with melon and maybe an olive or two, so mom thinks your eating healthy... a great starter to your Father's Day Picnic.

preparation time: 20 minutes                         serves: 8 - 10

Ingredients:

1/2 pound of Fresh Bocconcini or Mozzarella Balls
1/2 pound Provolone Stuffed Green Olives or other olive
4 ounces thinly sliced Prosciutto
1/2 pound cubed Canteloupe
2 ounces Hard Salami sliced
2 ounces Pepperoni rolled with Provolone Cheese 
1/4 cup shelled roasted & salted Pistachios
8 - 10 fresh whole dates
good quality extra-virgin olive oil
Fleur de sel or other course salt


serve with options:

Italian Bread Sticks, Crispy Flatbread Crackers like Croccantini, Fresh Italian Bread

Note: Arrangement was made on a 20 x 15 inch oval platter

Directions:

1) Slice Prosciutto into long strips and wrapped them around the pieces of Canteloupe.

2) Start your arrangement from the center and work your way out towards the ends.

3) The Bocconcini should be drizzled with olive oil and sprinkled with salt
