Rhubarb is an interesting fruit or vegetable depending on where you are from. Here in New York State rhubarb was declared a fruit by court order in 1947 because tariffs were lower on fruits. New York State is weird that way, we have a similar legal declaration about tomatoes being a vegetable???
In England the first rhubarb of the season is harvest at night, supposely to pick them when the stalks are most tender.. traditionally they would do this by candlelight... kinda of scary, or romantic depending how you want to look at it....
Rhubarb leaves and flowers are toxic and were used to kill rats back in the day... the stems have been traditionally used as a laxative. Before the availablity of a regular sugar supply rhubarb was not eaten as a food in Europe and the Americans. But in the 1700's it was discovered how wonderfully delicious this vegetable could be when stewed with sugar. It has since become a seasonal ingredient in pies and cakes...
