I saw some really excellent looking chorizo sausage in my green market and bought it with the thought, "I'm mix it with some seafood." When I spent time in Portugal, which neighbors Spain home of paella, I really loved the dishes they make with pork and shellfish... there is something really amazing that happens when you mix the two together.
On my evening dog walk a friend was telling me about an excellent paella he just made and that is when the thought came to me, "I have shrimp and chicken in the fridge I'm going to make a quick paella with the chorizo I just bought... and here is the result which was goobled up by my family. You don't have to follow this recipe to the letter, add in what you have on hand... it's a great way to use up leftovers.
Quick Paella

preparation time: 20 minutes Serves: 4 -6
Ingredients:
1 cup chopped chorizo sausage
1 cup cooked & peeled shrimp
1 cup cooked shredded chicken
2 cups cooked rice (preferably cooked in fish stock)
1 cup of salsa (any heat you like)
1 teaspoon of saffron
1/2 cup of peas
1 onion chopped
1 red pepper
1 cup of chopped olives or tapenda
1 cup of mushrooms chopped
2 tablespoon of extra virgin olive oil
* optional garnish shredded manchego cheese
Directions:
1) In a large skillet saute in olive oil any uncooked vegetables or meat.
2) After everything is cooked mix it all together in the skillet and heat it through.
