On my return to Honolulu Joseph's mother had ready for us a lunch of Lomi Lomi and Poi. I was very excited to try the dish I most associate with Hawaii: Poi. But I have to be honest, taro paste, which is made out of, really didn't do it for me.
Instead, I was surprised at how much I enjoyed the simple salad of tomatoes and salted/smoked salmon. When I made Lomi Lomi for my family my teenage son enjoyed it so much that he asked me to make a second batch, which he gobbled up himself.

I hope you have enjoyed my food voyage back to Hawaii this week. This blog is focused on Mediterranean cooking, but I am strong advocate of all types of traditional cooking.

Salmon Tomato Salad: Lomi Lomi

preparation time: 15 minutes serves: 4
Ingredients:
4 ounces of smoked sockeye salmon shred with skin removed
1 large tomato chopped small
1/2 of a small red onion, approximately 3 tablespoons minced
salt and pepper to taste
Directions:
1) Mix all ingredients together.
2) Eat right away or let sit for up to 2 hours. Do not refrigerate. The salmon is smoked so it can sit out. The tomatoes will get mealy refrigerated. You can add a little bit of olive oil to it if you like.
3) Serve on top of greens or on toast. If you are really brave make some poi and try it the traditional Hawaiian way!
Note: These are not traditional ingredients or preparation for this dish, because Pacific Salmon and Hawaii onions are hard to come by on the East Coast of the US, but I assure you that it tastes pretty close to the original.
