On our way up to the Adirondack Mountains the farm stands are still bursting with cucumbers. I have been experiment this summer with different cucumber salad recipes and I find this one to be my favorite. I hope you enjoy it too.
Cucumber Salad: Red Onion & Dill

preparation time: 10 minutes Serves: 4
Ingredients:
3 medium size cucumbers peeled and chopped
2 tablespoons of minced red onion
1 tablespoon of minced fresh dill
1 tablespoon of white vinegar
1 tablespoon of lemon juice
1 tablespoon of sugar
1 to 2 teaspoons of salt and ground pepper to taste
Directions:
1) Whisk vinegar, lemon juice, sugar, salt and pepper together. Set aside.
2) Peel and chop cucumbers, add dill and onion.
3) Toss with dressing. Serve immediately or chill for up to 2 hours.
