It is the day after Thanksgiving and I am sure tired of cooking, plus I need a break from turkey. Time to make my kid's favorite quick meal. Hot dogs baked beans and roasted potatoes.

This is kinda of a no recipe, recipe but I have to admit there is something really tasty about it. My mom made this same dish when I was a kid, but she pan fried the potatoes. The extra oil was tasty, but I think this roasted version is easier and healthier.

So enjoy the begining of the shopping season, but don't forget to get some relaxation time in too this weekend.

Hot Dogs Baked Beans with Roasted Potatoes

Ingredients:

1 package of hot dogs chopped

1 can baked beans

6 potatoes chopped

Extra Virgin Olive Oil (EVOO)

Salt and Pepper

Directions:

1) Pre-heat oven to 450 degrees. Chop up your potatoes into small cubes. Place them in a large baking dish and drizzle them with EVOO, salt and pepper.

Roast for about 20 minutes or until the potatoes are soft to a fork and lightly brown.

2) While potatoes are roasting sauté hot dog pieces in a skillet. When they are browned add baked beans and heat through.

Serve hot dogs and potatoes with green vegetable of your choice.
