Indian Rice: Peas & Onions: Simple Living and Eating


Today is my birthday and when this post goes live I most likely will be finishing up dinner at a great local restaurant with my family. 

I love my birthday… I actually have never known anyone with the same birthday as mine, which has made it even more special to me.

Since it is my birthday week I am sharing an extra simple side dish that I meant to share with you a while ago when I made Garam Marsala Chicken


Garam Marsala Chicken 

This is my favorite side dish for Indian food. I also love it with any type of chicken.

Indian Rice: Peas & Onions

Ingredients:

I cup of cooked Jasmine or Basmati Rice
1 cup of frozen peas
3 tablespoons of butter
1 tablespoon of a mixture of fresh minced herbs. I used equal parts: thyme, rosemary, and parsley
1 onion minced
1 teaspoon of curry powder
salt and pepper


Directions:

1) In a large skillet heat 1 tablespoon of the butter on medium high heat and saute the onions until they just begin to brown. Add the curry powder mix. 

2) Add the remaining 2 tablespoons of butter to the skillet. When it is melted add the peas and heat them through.

3) Add the cooked rice and fresh herbs mix well and add salt and pepper.
