Italian Zucchini Saute w/ Parmesan-Herb Breaded Tilapia: Simple Living and Eating

Product was provided by sponsor for this post, but opinions are 100% mine.

Do you have landlocked friends or family that love fish who can't find quality fresh fish where they live?

Send them a selection of prepared fish from Pete's Seafood Club. They ship fresh (not frozen) fish and shellfish anywhere in the US. You can select a package that suits any one's taste. Select from the following seafood combination boxes: A Little Bit of Everything, No Hassle Seafood, Taste of Asia or Taste of the Mediterranean which is what my family tried.

It includes:

- (2) Herb Parmesan Breaded Tilapia
- (2) Lemon Pepper Breaded Tilapia
- (2) Seafood Stuffed Salmon
- (2) Spinach & Feta Stuffed Salmon

The Herb Parmesan Breaded Tilapia has a light amount of cheese flavor that will entice even the non-fish eater in the family to take a bit.

 Fresh and Healthy!

I paired the tilapia with a classic Mediterranean side dish Italian Zucchini Saute. Even my daughter who can be a little picky about fish gobbled it up. The cheese and breading really made it appealing to her, and my son who loves fish ate two pieces.

Ingredients:

4 small zucchini halved and sliced thinly
1 onion halved and sliced thinly
1/4 cup of Tomato sauce (great way to use leftover sauce)
1 teaspoon Italian Seasoning Mix
1 tablespoon of Extra-Virgin Olive Oil (EVOO)
salt and pepper to taste

Directions:

1) In a medium size skillet saute the onions in EVOO add the zucchini after about a minute along with the Italian seasoning, salt and pepper. Cook until onions wilt and zucchini begins to brown.

2) Add tomato sauce mix well and heat through.
