Italians cook lentils on New Year's Day to bring prosperity and luck for the coming year. This belief is probably founded in the fact that lentils kinda of resemble the Italian lire coin.

I believe that eating lentils makes you rich in health and in money... the more you eat lentils the less money you will spend on food. They are truly cheap and packed with nutrition. Lentils are one of the best vegetarian sources of iron... need I say anymore?

I've made quite a few lentil recipes in the last year: Pumpkin Lentil Stew, Simple Lentil Soup, and Fried-Goat Cheese, Beet & Lentil Salad so I thought I give you my twist on lentil soup... (don't tell my mother) but sometimes I make lentils with Indian spices. Here is my simple soup.

Indian Lentil Soup

Preparation: 15 minutes                             Serves: 6 - 8

Ingredients:

2 tablespoons olive oil
1 onion minced
2 celery sticks chopped small
2 large carrots chopped small
4 cloves of garlic minced
1 teaspoon of grated fresh ginger
2 teaspoons of Garam Masala
1 cup of lentils (I used Toor dal dry) any kind is fine
salt and pepper to taste
1 1/2 32ounce (48 ounces) containers of vegetable broth 
1/2 cup  1/2 & 1/2 
Garnish either: cilantro or chives fresh and minced

Directions:

1) Heat oil in a large sauce pan on medium high heat.

2) Sauté: onions, celery, carrots and garlic until they wilt.

3) Add ginger, Garam Masala, lentils salt and pepper stir for 2 minutes.

4) Add broth and bring the soup to a boil. Lower the heat and let it simmer for 20 minutes or until the lentils get soft.

5) Leave the soup chunky and add cream and garnish, or puree it with an immersion blender or in small batches in a blender.

Great with Naan bread and/or basmatic rice.
