I found this gem of a recipe nearly 10 years ago in a Woman's Day magazine. Since then I've made them from time to time and am always surprised with the results. They are just delicious and look super cute too! The original recipe calls for unsweetened baking chocolate, but I've found over the years that I just don't stock it in my pantry. So now I use cocoa powder instead. I love the new Snickers Bites too- they really make the recipe come together faster! I just topped them with about 1/2 a container of store-bought frosting I heated slightly in the microwave. No need to spread- I love how some of the caramel from the Snickers peeks through!
Snickers Brownie Bites
Adapted from the Woman's Day recipe here
- 3/4 cup butter or coconut oil, softened
- 3/4 cup cocoa powder
- 1 1/3 cup sugar
- 3 eggs
- 1 1/2 tsp vanilla
- 3/4 cup flour
- 1/2 bag Snickers Bites
- 1/4 cup mini M&M's
- frosting for top, if desired
Heat oven to 350 degrees.
Spray mini muffin pan well.
Whisk together butter or oil, cocoa powder, sugar, eggs and vanilla. Stir in flour just until blended.
Spoon 1 TBSP batter into each mini muffin cup. Press a Snickers Bite into the dough, until the dough and top of candy are at the same height.
Bake 16-18 minutes. Remove from oven and completely cook before trying to take the Bites out.
Top with a dollop of frosting and mini M&M's.

Much better!! You can just use about 1/2 can of pre-made frosting. I heated it in the microwave for a few seconds to soften it, then just dollop a warm teaspoonful on top.
