Lemon bars were a popular dessert in our house when I was growing up. They're also great for summertime because they're light and have just enough lemon! These lemon bars are so easy to make - which is GREAT, because everyone eats them so fast that you'll probably have to make more!!
Lemon Bars
Crust:
2 cups flour
1/2 cup powdered sugar
1 cup butter
Mix flour & powdered sugar together.
Cut butter into flour & sugar mixture - I just cut the butter into chunks, then used two forks until crumbly.
Don't worry: the mixture is supposed to be lumpy!
Press into 9x13 pan and bake at 350º for 20 minutes.
Filling:
4 eggs
2 cups sugar
5 Tablespoons flour
1 teaspoon baking powder
1/4 teaspoon nutmeg
1/3 cup lemon juice
2 Tablespoons lemon rind {optional, but adds more flavor}
pinch of salt
While crust is baking, mix the together 4 eggs and 2 cups of sugar.
Mix well with a whisk or hand mixer until it's light in color.
Set aside and mix the dry ingredients together.
Add in lemon juice and egg/sugar mixture and mix well.
Pour filling over hot crust {right after it comes out of the oven is best}.
Bake at 350º for 25-30 minutes or until light golden brown.
Sprinkle with powdered sugar, cut into bars and serve!
