This recipe is from my husband's side of the family. I've made it several times over the years and just love how easy it is. Not only that, but I think it tastes just as good as restaurant versions!
Something I do to cut down on prep time is to use a roast for the beef. I buy a 3-lb roast and cut it all up into thin slices and divide the meat into 3 different meals. I wrap them in Press & Seal Freezer wrap, then in foil and freeze. I pull it out that morning for dinner that night and don't have to cut any meat!
Easy Broccoli Beef
1 lb beef, cut into thin slices
6 cups cut broccoli
Gravy:
- 2 ½ c. water
- 3 TBSP cornstarch
- 1/3 cup soy sauce
- 2 TBSP cornstarch
- 2 TBSP soy sauce
- 2 tsp sugar
- 2 tsp ginger
- 2 cloves garlic
Heat about a TBSP of oil in pan. Stir fry meat 1 minute. Add broccoli and cook 3-4 minutes. Add gravy mixture and slowly bring to a boil. Mixture will thicken as you cook it for another 4-5 minutes. Serve over hot rice and enjoy!
