HOLIDAY BAKING: SWEET SNACK MIXES

The holiday treats are taking over my kitchen, but yet I still keep going! I only make all these treats once a year though, so I'm trying to enjoy it. I still have several items on my "To-Do" list, including a trip to Winco tonight, but I thought I'd take a moment and post a couple more treats!

I've taken advantage of a couple good sales on Chex cereal and got several boxes for around .75 each. I used them to make a couple yummy, easy treats.


First is the classic Muddy Buddies. If you haven't ever made these, it's time to start a new tradition. They're super easy to make and so addicting. My kids wanted to pour milk over them and eat them for breakfast the next morning. Ha!

The recipe can be found on the back of any Rice Chex cereal box, as well as here, on the Chex website.

Muddy Buddies

9 cups Rice Chex® cereal (gluten free)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Into large bowl, measure cereal; set aside.

In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator. YUM!


This next treat was inspired by fellow blogger, Sarah from A Thrifty Mom. She calls this Chewy Candy Cane Chex Mix however, I left out the candy canes, so I'll leave it at Chewy Chex Mix. The original recipe calls for coconut, which I love, but didn't have any! Gasp! I know, it's hard to imagine, but it's true. Instead of running to the store, I just left it out and it still tasted great.
Chewy Chex Mix
Ingredients:
  • 16 cups of dry cereal ( Chex, Life, Golden Grahams, etc. Remember the Nature's Path cereal we had a coupon for a while ago? I added that too!)
  • 2 cups grated coconut
  • 1 cup sliced almonds, or any other nut {I added some salted peanuts}
  • 2 cups pretzels
Syrup coating:
  • 1 cup sugar
  • 1 cup Light Karo syrup
  • 3/4 cup butter ( 1 1/2 sticks)
  • 1 cup chopped candy cane dust {I added a bag of holiday M&M's instead!}
In large bowl, mix together cereal, coconut, nuts or seeds, and pretzels.
In a medium sauce pan add sugar, butter and corn syrup. Stir over medium heat. Once it comes to a boil cook for exactly 2 minutes! Set a timer, because if it cooks too long, it will make your Chex mix too hard. {I speak from experience.}
Pour over cereal mixture and stir to coat. Allow to cool before adding M&M's. Enjoy!
