Caramel Sauce Recipe...step by step.

Raise your hand if you like caramel sauce....

Yes, today we are going to learn the making of caramel sauce....homemade caramel sauce.....to drizzle on ice-creams, cakes, biscuits....apples, bananas....or simply to lick from the bowl....that's my favorite thing.

Last time when I made birthday cake for my son....I drizzled this divine heavenly  caramel sauce over the cake...and boy! it gave an extra ooomph! to the cake...really!!

All you need is three ingredients and just half an hour time...and ooey gooey thick caramel sauce is yours.

Before we begin a note of caution: While making this use a deep saucepan, caramelized sugar will be much hotter than boiling water, when you add cream and butter the mixture will foam up, so please be careful....shoo kids away while making this sauce.

Also please keep all the ingredients ready near by; as caramel making is a fast process and you cannot go hunting for the ingredients.

Adapted from here.

Ingredients:
Sugar: 1 cup ( I use 200 ml cup).
Salted butter: 3/4 stick, 75 gms.
Amul low fat cream (25%): 1/2 cup.

Method
In a deep saucepan, put in the sugar and keep the saucepan on medium flame.

As the sugar begins to melt, swril the pan sideways.

I personally do not like stirring while the sugar is melting because there will be sugar lumps.... so for me swirling the pan works best...tilt the pan on both sides...

Swirl until the sugar is melted and dark amber colour.

Immediately add the butter to the pan.

And mix well until the butter has melted....

Once the butter has melted switch off the fire and add the cream.

Whisk until the caramel is smooth. Note that when you add the butter and cream the mixture will foam up and that is why you should use a deep bottomed saucepan..

Allow it cool down and transfer to a bottle....this will keep in room temperature for 2 days and if refrigerated upto 2 weeks.

So get ready to make this easy silky smooth caramel sauce.....and forget about store bought ones this Christmas.

Drizzle it on all your favorites.....for that extra oomph!
