Lemon Rice is very easy to prepare.Lemon rice is an lunch box recipe.Health benefits of lemon include treatment of throat infections, indigestion, constipation dental problems, fever, hair care, skin care, internal bleeding, rheumatism, burns, overweight, respiratory disorders, cholera and high blood pressure.Health benefits of lemon are due to many nourishing elements like vitamin c , vitamin B, phosphorous, proteins, and carbohydrates present in it. Lemon is a fruit that contains flavonoid, a composite that holds antioxidant and anti-cancer properties.Now we prepare quick lemon rice.

Ingredients

rice - 1 cup.
mustard seeds - 1 tsp.
chana dal - 1 tbsp.
peanuts or ground nuts - 1/4 cup.
 oil - 1 + 1/2 tbsp.
salt - for taste.
curry leaves - few 10 leaves.
corinader leaves  - 1 tbsp [chopped for garnishing].
green chillies - 5 - 6.
lemon - 1 big (juicy) to hav 2+ 1/2 tbsp or 3 tbsp of juice.
ginger - 2 tsp [chopped].
turmeric - 1 generous pinch.

Preparation

Pressure cook the rice as you cook rice normally and spread the rice in a plate or vessel and allow it to cool.so the rice gets seperated.

In a blender or mixie grind ginger,green chillies and salt to a thick  paste by adding very few drops of water.

Method

Heat the oil add mustard seeds,when it splutters add chana dal, add peanuts saute well till it turns golden brown colour, then add curry leaves.
saute for a minute.Now add ground paste, stir well.Add a pinch of turmeric.stir well.
Now switch of the stove.Add the cooked rice and mix well.Squeeze the lemon over the rice.
Mix well.Finally garnish with coriander leaves.
