In the pacific northwest, I am blessed to be able to garden year round. While I had a few crops not fare so well this year, my kale on the other hand is going crazy. I have about 10 plants, each 4-5 feet tall full of beautiful, leafy goodness. This may be my all time favorite way to consume kale. With almost 700% of the rda for vitamin K, 300% vitamin C and 180% Vitamin A, it's hard to go wrong.
Ingredients*
- 3 small or 2 large lemons
- 1 cucumber
- 2 granny smith apples
- 1/3 green bell pepper
- 5 kale leaves OR 2 cups baby spinach
*Creative Green Living recommends purchasing organic juice ingredients when available
Instructions
- Wash all ingredients thoroughly (even if using organic).
- Cut away the peel of half of your lemons.
- Cut produce into pieces appropriate for your juicer.
- Juice all fruits and veggies together.
Yields approximately 2 servings (10 ounces each)
