Italian Easter Rice Pie: Foodie Friday

Italian Easter Rice Pie
Italian Easter Rice Pie

Ok, wasn't it just St. Patrick's Day... now Easter is next week. Isn't there usually a little more time between these two holidays?

Having been raised Italian-American dessert was never a given after dinner. Italians traditionally eat a little bit of fruit and cheese after a meal. Which is super healthy and definitely helps to prevent diabetes... which Italians are very prone to getting. But, Easter has always meant pies to me...three very special and distinctly Italian pies: Ricotta Pie, Wheat Pie and my favorite Rice Pie.

My family has always been very focused on making Pizzagaine for Easter which is a savory pie, other family members would make the dessert pies, so I don't have a family recipe to share with you. But let me assure you this is a delicious version of this classic Italian pie. If you like rice pudding you will love this pie.

Because the filling is cheese and rice it is easy to make it gluten-free by changing the flour in the crust to gluten free flour. I use cup 4 cup baking flour. We had some left over pie dough and filling so my daughter and I made these mini pies. You might want to make all of yours this way.

Strata
Strata
This is a very frugal recipe. You can throw your stale bread in to it, and whatever meat and vegetables you have in the fridge. Mixed with some cheese and eggs and you have a comforting meal.

Here is a meal from a cuisine that I would guess most of us know little about: African. If any of you know of a good African cookbook both this blogger and I would be interested in it.
