Idiyappam(semige) is a special culinary in South India.Idiyappam is served as a Main Course in South Indian foods.It is called sarasthalu in telugu. It is prepared with rice flour and salt. It is a low calorie diet. We learn three methods of preparing semige.Two methods are traditional, and one method is instant method.

Ingredients
idiyappam flour or rice flour - 2 cups.
salt - needed.
water - 2 1/2 cup.
Preparation
Add Water in a pan, allow it to boil, when it starts boiling, switch off the stove, add idiyappam mix and salt.mix well. [it will be hot so mix with spachula.] it may cool within few minutes then knead well.you should get a soft dough as shown in the picture.

Get the rice noodles from market.Take a big pan, add more water, and allow the water to boil, when the water starts boiling, add rice noodles to it, cook it, till it becomes soft, then drain it, in the colander. Instant idiyappam is ready.

Now basic idiyappam is ready.it can be served with any of these dishes such as Kadalai curry,coconut chutney,coconut Milk,sodhi and vegetable korma .

Ingredients
salt - for taste.
Preparation
Soak idli rice for 4 to 5 hrs.
Method
- Grind idli rice into a fine batter with needed salt.
- Batter should be like idli batter consistency.
- prepare idli's in a idli plate as you prepare normal idli.
- Then place some idli's into traditional sevai/idiyappam press.[it is to be noted that only hot idli's should be placed in idiyappam press or else it will be very difficult to sqeeze].
- Then rotate the press in cirular motion. you get rice noodles as shown in the picture.
tips:While placing hot idli's into idiyappam maker,dip your hands in between with cold water , so that you can tolerate the heat of idli's.
