While I was in the Adirondack Mountains last weekend we had some leftover Pork Loin from a barbecue. What is one to do with a pound of pork and four people to feed? 

I went the traditional diet route. Both Asians and Mediterraneans have alway use meat as a condiments instead of the main course. By mixing meat with vegetables you add flavor to a dish with out adding too much fat and too much protein.

The pork in this stir fry can be subsituted with any leftover meat you have on hand: chicken, boiled ham, steak, even fish...

Pork Stir Fry with Rice Noodles

preparation time: 20 minutes                        serves: 4 - 6

Ingredients:

4 tablespoons or more of canola oil
1 cup of leftover pork or other meat chopped small
1 8 ounce package of rice noodles Py Mai Fun or vermicelli noodles
1 5 ounce can of water chestnuts drained
1 8 ounce can of baby corn drained and chopped
1 bunch of scallions choppped
1 yellow pepper chopped
3 carrots cut into match sticks
1 cup of broccoli chopped
3 cloves of garlic chopped
6 ounces of snap peas remove strings
*chili garlic sauce (optional garnish)

sauce:

1/4 cup of soy sauce
1/4 cup of oyster sauce
1/4 cup of sherry
1 teaspoon of corn starch

Directions:

1) Bring a well salted pot of water to a boil for the noodles.

2) Whisk together ingredients for sauce and set aside.

3) Heat on medium high 2 tablespoons of canola oil in a large skillet or wok. Saute garlic. Do not brown it. 

4) Add uncooked vegetables first saute, then add canned or leftover vegetables with meat and heat them through.

5) When the water is boiling briefly cook noodles until they soften about 2 to 3 minutes. In the meantime remove the meat and vegetables from the skillet and add 2 more tablespoons of oil to the skillet heat on medium.

6) Toss softened noodles in the oil for about 2 minutes or until they start to stick to the pan. Turn the heat off. 

7) Add vegetables and meat back into the pan and cover them and the noodles with the sauce. Mix well and serve with chili garlic sauce for a little spicy kick.
