This is a favorite recipe on my husband's side of the family and, being the soup lover than I am, I've adopted it as well! It's so easy and makes quite a bit, so you have leftovers for lunch.
German Sausage Soup
- 1 lb sausage, cooked and in small pieces {I used turkey bratwurst, sausage casing removed prior to cooking}
- 1 medium onion, diced
- 1/2- 3/4 lb fresh green beans, cut into halves or thirds, depending on original length
- 3-4 medium sized russet potatoes, scrubbed and diced
- 1 can- 1 lb mushrooms {or optional! Our kids don't care for mushrooms, so I just add a small can}
- 6 cups water
- 3 beef bouillon cubes {or 3 tsp beef bouillon from a jar}
- 1 TBSP seasoning salt
- 1 tsp dried basil
- 1 tsp Summer Savory seasoning
This is one of those soups where you literally add everything to a large post and let it cook for a while! I just end up adding ingredients as I have them ready- add the sausage to the pot and cook it on low while I wash and trim the green beans. Add the beans, then scrub the potatoes and add them once they're diced. Dice the onion and add it to the mix. Lastly, add everything else! Once you've got everything in the pot, bring it to a boil over medium- high heat. Turn it down to simmer and let it cook for another 2 hours.
I served mine with Honey Oat Quick Bread. Yum!
You can also make this a crock pot soup quite easily- add everything to the crock pot and cook on low 10-12 hours, medium 7-8 hours or high 5-6 hours.
