Grilled Swordfish


Swordfish is really a beautiful piece of meat. It is both mild and meaty. A nice fish steak is satisfying and healthy all at the same time. Beautiful. My husband wanted a nice fish steak for his birthday dinner and swordfish just happened to be on sale. I went with a lime-based marinade with a bit of heat to it to give the mild fish some spice. Our grill was out of propane so I actually did made this on my electric griddle. Nice grill marks, eh? I just made sure the griddle got as hot as possible before putting the fish on. 


Ingredients

2 limes, juiced
2 tablespoons red wine vinegar
1/4 cup olive oil
1 tsp salt
1/4 tsp pepper
1/2 tsp basil
1/4 tsp cayenne pepper
2 swordfish fillets


Instructions

1. Combine lime juice, vinegar, olive oil, salt, pepper, basil, and cayenne pepper in a bowl. Put the fish in the bowl, cover with plastic wrap, and let marinade for 1 hour. 

2. Preheat a grill (or griddle) until it is smokin' hot. Grill the fish for 5-7 minutes per side until it flakes easily with a fork. Actual grilling time will depend on the thickness of your fillet.
