Tandoori Chicken Sandwich.


With the weather so hot, my kids wanted something to make them cool, and thus tandoori chicken sandwich was born, which my kids gave a high five.....it was that good. Summer is the best time to have cold sandwich, salads and ice-creams.

Both my kids are at home enjoying summer vacations, two months break from studies and routines...with Homey out of the house by 9 in the morning, kids and myself have the rest of the day for ourselves....until Homey comes back from office....kids-at-home means they are always-hungry!! lol.



This is the best way to add veggies to your kids diet/sandwich....I used light mayo and cheese to make it skinny...also, I used plain white bread, but you can also use brown bread to make it more healthier.

Makes two sandwich
Ingredients:
Bread: 4 slices, preferably day-old bread.
Tandoori Chicken: 2 or 3 pieces, shredded.
Cheese slice: 2.
Mayonnaise: 1 tsp.
Plain yogurt: 1 tsp.
Pepper powder: 1 tsp.
Lime juice: Juice of 1 lime.
Carrot: 1, chopped.
Cucumber/Zucchini: 1, chopped.
Capsicum: 1/2 chopped.
Green onions: 3 sprigs, chopped (or 1/2 onions chopped).
Tomato: 2 slices.
Capsicum: 2 slices.
Salt as needed.

Method:
I used my food processor to chop up the veggies.


Then I mixed 1 tsp mayo, 1 tsp plain yogurt, salt, and juice of 1 lemon. I mixed the veggies into it, added the pepper powder. Lastly add the shredded tandoori chicken.


Mix everything really well. At this stage, you can chill this for 10 min or so.....I did not chill while making this.


Take one slice of bread, place the cheese slice on top.


Top it with the mix.....I took about 3 tbsp....spread it.

I also topped it with one thin slice of tomato and capsicum. Repeat the same with another slice.
You can have this as an open sandwich or can close it with another slice of bread....I did have some left over dressing, which I refrigerated and used up the next day. Kids will defiantly ask for more....so its better you have some left over dressing :)

This sandwich is so easy to make.... if you already have left over tandoori chicken.
