This is one of my favorite go-to meals! Granted, I try not to consider the sodium intake... but man, it's so good! It's really easy to grab most all of the ingredients from the cupboard. Husband loves it. Kiddo loves it. I love it (and making it!). It's super adaptable, too. Give it a try!
Taco Soup
1 chopped onion
1 lb. lean hamburger
Brown hamburger and onion in saucepan.
Add:
1 (15 oz.) can of corn, with liquid
2 (15 oz.) cans of tomato sauce (I've also used 1 can of paste+1 of sauce, or larger sizes of sauce- just whatever is in the cupboard!)
1/2-1 can of water (rinse out the sauce cans with the water and add it to the pot)
2-3 cans of beans (kidney, chili, black... whatever!)
3/4-1 package taco seasoning (to taste)
Mix and warm ingredients. Serve with sour cream, shredded cheese, and tortilla chips!
