Marble Cake Recipe


Marble cake.....or rather my favorite marble cake.

Warm spongy marble cake with a glass of milk=.heaven...it brings back nostalgic childhood memories of amma's cakes.

Since I favor volume cooking I am addicted to cups and spoons.....I hate to weigh flour, butter etc...its so time consuming and irritating....some how volume cooking works out fine for me...even for baking...touchwood.

*I am not a professional baker, I bake things. I use what I have on hand most of the time which means salted butter instead of unsalted, and use substitutes for cake flour, brown sugar, buttermilk etc. So, if you are an experienced baker, take note and adjust accordingly.

Since this cake calls for cake flour...do not panic and there is no need to buy cake flour when you can make it at home, to make 1 cup of cake flour: put 2 tbsp of corn flour into a cup and fill it with flour. and sieve......your homemade cake flour is ready.

Buttermilk substitute: To make 1 cup, pour 1 tbsp of lemon juice or 1 tbsp of vinegar and then add  milk to fill the cup. Let it stand for 5 min to curdle.

Ingredients:
Unsalted Butter : 1 stick, 1/2 cup, room temp, I used salted and omitted the salt.
Cake flour: 1 3/4 cups.
Baking powder: 2 tsp.
Salt 1/2 tsp, omit if using salted butter.
Sugar: 1 cup.
Eggs: 3 large, room temperature.
Vanilla extract: 1 tsp.
Butter milk: 2/3 cup.
Cocoa powder: 1/4 cup plus 1 tbsp.
Boiling water: 1/4 cup plus 2 tbsp.

Method:
Put cocoa powder into boiling water and stir vigorously. Keep aside.
In a bowl put cake flour, baking powder and salt.
In a large bowl cream butter and sugar. Add eggs, vanilla, and cream again. Dunk in the flour alternating with buttermilk and fold. Keep aside 1/3 of the batter in a separate bowl, add the cocoa mix into this and mix well....don't worry if its a bit runny.


Grease a baking pan and at this point preheat your oven.

Spoon in the white batter and the cocoa batter....cocoa batter was a bit runny. Lastly run a knife to make a marble pattern.

Bake at 180 degree C for 30-40 min or until done.
# Since I used a large baking pan, baking time was less than 30 min...
