Skinny Cauliflower Wraps.....from scratch.



Yesterday after Palm Sunday Mass, I made this awfully delicious and skinny cauliflower wraps for my family.  With the beginning of Holy Week and since Homey and myself are abstaining from meat and fish till Easter; I insisted our kids to join in with us during the Holy Week. I had some precooked rotis in the refrigerator, and putting together this wrap was super easy.

This recipe is nothing fancy; it is easy and simple and very Indian, and a childhood favorite. A perfect lunch box munch for kids......and perfect for those observing Lent.

I have wrapped it in whole wheat Indian flat-bread/roti. Made the filling with just one tbsp of oil and that makes it super skinny for all you dieters :)



You can also have this dry curry as a side dish for roti, naan, poori etc.

So lets get cooking.

Precooked roti:
Indian Flatbread/Roti:

Ingredients: 
Cauliflower: 1 small medium.
Jeera/Cumin: 1/2 tsp.
Onion: 1/2 of a medium sized, chopped.
Ginger: 1 small piece, grated.
Garlic: 3 or 4 cloves, slit.
Kashmiri Chilly Powder: 1 tsp.
Coriander powder: 3/4 tsp.
Garam masala powder: 3/4 tsp.
Turmeric powder: 1/4 tsp.
Amchur/Dry mango powder: 1/2 tsp.
Refined oil: 1 tbsp.
Water: 1/4 cup.
Salt about 1/2 tsp.
Coriander leaves: A bunch, chopped.

Method:
Wash and cut the cauliflower florets and keep aside.
I used my cast iron kadai to make this; heat the kadai with 1 tbsp of oil ( I used rice bran oil). Add in the cumin seeds and allow it to crack.


Simmer the fire, add in the chopped onion.


Grate in the ginger and the cloves.


Add in the Kashimiri chilly powder, turmeric, coriander, and gram masala.


Add 1/4 cup of water and salt. Allow it to come to a boil


Add the cauliflower, mix, cover and cook. Once it is cooked, sprinkle amchur/dry mango powder and chopped coriander leaves......and stir for 3- 4 min...and its done. Heat roti in another tawa and put 2 tbsp of this mix in it and wrap it up.....you can also drizzle a tsp of homemade yogurt on top before wrapping.


Enjoy as a side dish or filled in a wrap.
