Rum and raisin brownies or should I name it Christmas Brownies?? Rum soaked dry fruits is mixed into the brownie batter, topped with chocolate buttercream, and a generous sprinkle of rum soaked dry fruits....yes!! Christmas is just around the corner!!
I have always thought and believed that rum soaked dry fruits are only for fruit cakes until I made this brownie. Do I have to tell you, how good it tasted with the bits of boozy dry fruits in the brownies!......dry fruits and chocolate buttercream......it is so awesome! and so very Christmas!! I made this as a gift for someone, but ended up finishing it!! and felt so guilty for the indulgence, but then I am a hardcore chocoholic and this was screaming at me!! this made my knees weak!! you should always give in when you crave chocolate...trust me it will make you glow!
About the brownies, since I found Hershey's brownies, I have not looked further ....I am so satisfied with that, I mean who wouldn't be, this recipe does not need any hand mixers, just a whisk would be fine, no bringing butter to room temp, no need for any bitter chocolate as cocoa powder would do wonders for this brownie....its moist, fudgy, and perfect...so I have not looked further!! Okay, I admit I did try out a few brownie recipes after I first posted this brownie recipe...but nothing beats this one.
About the buttercream, I did share how I make chocolate buttercream in my food processor; if you haven't checked it out yet, it about time you did.
Lastly, about the soaked dry fruits, I shared how to soak dry fruits in rum, and did warn you that some goodies are coming up which has them.. Again, if you have not soaked dry fruits yet, its high time you did...com'on Christmas is just around the corner!
What I like about this brownie-in-a-pan...or whatever it is called...meaning, you do not have to flip the cake out of the pan, bake it, spread the chocolate buttercream, and slice and serve... brownies sit in the pan, until the last piece....and hence I used my glass baking dish.

This recipe is not suitable for children and pregnant women.

Cooking time: Approximately 20 min.
Ingredients:
Butter: 1/2 cup/100 gms/1 stick-melted.
Sugar: 1 cup.
Eggs: 2, beaten.
Flour: 1/2 cup.
Cocoa Powder: 1/3 cup (I used Cadbury's cocoa powder)
Vanilla essence: 1 tsp.
Baking Powder: 1/4 tsp.
Salt: 1/4 tsp, omit if you are using salted butter
Rum/brandy soaked dry fruits: 1/2 cup.
Flour: 1 tbsp for coating the dry fruits.
Frosting:
One measure, chocolate buttercream.
1 tbsp of dry fruits to sprinkle on top.
Method:
Preheat oven to 180 degree C, and grease and flour a 9 inch pan, I used my glass baking pan...keep it aside.
Sift, mix the dry ingredients-flour, salt, baking powder, and cocoa powder.
Melt 1 stick butter, add in the 1 cup of sugar.
With a whisk, stir/cream it. Then add the two beaten eggs, and stir again....
Add in sifted dry mix, and gently fold into the batter.
Measure 1/2 cup dry fruits into a bowl and add in 1 tbsp flour. (the flour, helps the dry fruits from sinking)
Give it a nice toss or a mix.
Add this into the brownie batter....fold gently.
Transfer it gently into the prepared baking pan.
Bake for 18-20 minutes or until done...brownies should not be overcooked. Spread the chocolate buttercream on top while still warm...and sprinkle some dry fruits on top.
Cut into squares and serve.
Enjoy the goodness of dry fruits and chocolate.
